In other news, I was told to not retake the celiac test. Apparently, one you go gluten-free, the evidence of celiac leaves the blood. If I do not feel a ton better, I am supposed to go back to eating gluten for awhile and then get tested. I’m considering asking for a genetic test to see if I even carry the gene for celiac, though I assume that’s kinda pricey. But if it will save me from a lifetime of dinners like these, I will be pleased.
