Spring kitchen cure
I FINALLY had a chance to do last week’s homework assignment, well, half of it at least. I decided to go the veggie route mostly because I knew it would be quicker and I don’t have a ton of time this week. I still want to try to roast a chicken sometime soon but this week was definitely not the right week for it. So I roasted some sweet potatoes. They didn’t get as crispy on the outside as I would have liked, but they were yummy. I only ate a few of them so I could save the rest of them to puree for soup. That’s my goal for tomorrow, assuming I remember to bring home my blender tomorrow. It’s been sitting at work for ages.
Oh yeah and that last picture down there, those are the steak fajitas I whipped up while waiting for the sweet potatoes to cook. They were delicious. Yum!
